The vermouth heritage of Laguardia is not only a testament to local history, but also reflects a growing passion for artisanal spirits throughout Spain. Today, each bottle of Javier's Vermut Todo El Rato is a tribute to this rich tradition, combining the wisdom of past generations with contemporary practices that seek to enhance and preserve the authentic flavours of the region.
An artisinal vermouth made with the base of the Anahí semi-sweet wine. Tempranillo Blanco, Malvasía and Sauvignon Blanc grapes are carefully selected and macerated with various aromatic herbs.
Slow and controlled maceration is crucial for extracting the flavours and aromas of the herbs and spices used, which are fundamental to defining the vermouth's character. Ingredients such as rhubarb, chamomile, and other spices contribute distinctive aromas and different nuances to the final product.The resulting liquid is a striking, dark mahogany red.
Aged 12-14 months in French oak barrels (225L). 14.5% alc./vol.
Tasting note: Complex cocoa and caramel aromas and flavours with fresh notes of aromatic herbs. Rich with balanced acidity, bitterness, and sweetness - the hallmark of a good Vermouth - and a long warm finish.
Menu matches: Aperitif, on ice or not, or part of a cocktail with orange bitters.
