Collection: Baldovar 923
The winery is located in the mountains of Valencia, 100km from the sea, in the village of Baldovar (923 meters altitude), in the Serranía del Alto Turia (UNESCO Biosphere Reserve). It was established in 2016 as a dream of its founders - Nito Alegre Soler, Andres Vergara Brocol, and Fransico Bosco - based on the potential to produce high quality wines given the purity of the soils, climatic characteristics, high altitude, and the old vine varieties of the area.
They restored the wine cellars of a cooperative (San Roque de Baldovar) built in 1958 that had closed more than a decade prior. Their 14 hectares of vines are 20-80 years old and grow at 900-1,200 meters altitude. Working with native varieties of the Serranía, their wines are made with as little intervention as possible, both in the vineyards and in the cellar using indigenous yeasts with no added fining agents, nutrients, or chemicals.
They act on the plots as assistant’s of what nature provides, making decisions that with the passage of time gives the grapes particular aromas, flavours, and nutritional qualities. All vineyard work is manual, and each task follows the biodynamic calendar of Maria Thun. The goal to produce wines that are balanced, with greater depth and organoleptic complexity, and longer aging potential.
In the restored cellar, they have installed stainless steel tanks for fermentation, and amphora and clay Tinajas for ageing. Pressing is done with basket presses, and ferments are spontaneous.
