Cava is a Spanish sparkling wine made using the "traditional method" (like champagne), where the second fermentation to create the bubbles takes place in the bottle. Most Cava comes from Cataluña, around the town of San Sadurni de Noya, but the Cava DO does allow production in other areas. "Classic" Cava is made from Macabeo, Parellada, and Xarel-lo grapes, however other international varieties are allowed in the blend.
