A field blend of over 15 native varieties - Gouveio, Viosinho, and Rabigato being the main ones - from +70 year-old vines grown on hillside slopes (schist and granite soils), hand-harvested in September.
Grapes receive a 24-hour cold soak then pressed; no SO2 added at crush. Spontaneous fermentation in French oak and Chestnut barrels (new to 10 yrs old) with ambient yeasts, then ageing (same barrels and cement tanks) for 12 months on the fine lees. Not fined or filtered. 6,000 bottles produced. Alc./vol.: 12.5%.
Tasting note: Straw/gold colour. Tropical aromas and flavours of warm citrus nectarine, and apricot, with gentle notes of saffron, fennel, and anise. Medium-bodied, dry, ample acidity, well balanced, with a long, rich finish.
Pairing Suggestions: A wine to pair with grilled fish, shellfish, and strongly-flavoured vegetarian dishes.
In case you are wondering, UIVO (pronounced wee-voh) means “howl”, and has many connotations, including a reference to frequent wildlife visits in the vineyards, which includes foxes (see the label).
