Case of 6 bottles.
70% Merseguera and 30% Macabeu; a skin-contact wine with lively textures. Vineyard soil is limestone and sandy loam and the vines (bush and trellised) are between 20-60 years old, from lower-altitude plots. Climate is mediterranean mountainous, with continental (cold) influences. Rainfall: < 350mm annually.
Bunches are destemmed: 50% of the load is pressed and receives a pre-fermentative maceration while the other half is fermented on the skins (Merseguera only). Alcoholic fermentation in temperature-controlled stainless-steel tanks for half a lunar cycle, to preserve the aromas and gently extract only soft tannins. Aged 10 months in stainless steel tanks, used 500L oak barrels, and a 250L Tinaja. Blending one day before bottling; unfined and unfiltered. 13.5% alc./vol. R.S. 1.3 gr/L. ~6700 bottles produced. Certified biodynamic and suitable for vegan diets.
Tasting note: Pale gold colour, with aromas and flavours of pear, apricot, and citrus zest. Dry, medium-bodied, with slight tannic mouthfeel, mineral/salty notes and fresh acidity.
Menu matches: Food wine: grilled seafood and white meats, rice dishes, a cheese course, and earthier vegetarian options.
