Case of 6 bottles.

A dry rosé wine made from Bobal and Tempranillo grapes - a blend representing the rugged mountainous terrain.  Vines (bush) are 25-80 years old, and rooted in soil rich with fossilized coral and oyster shells. Climate is mediterranean mountainous, with continental (cold) influences. Rainfall: <350mm in 2022.

Harvest is by hand, and grapes are whole-bunch pressed mechanically before severe off lees racking. Alcoholic fermentation in temperature-controlled stainless-steel tanks then aged 10 months in used oak barrels, Tinajas, and steel tanks, on the fine lees. Bottled unfined and unfiltered. 12.5% alc./vol. ~4100 bottles produced. Certified biodynamic and suitable for vegan diets.

Tasting note: Pale salmon pink with slight bricking hues at the rim. Aromas and flavours of wild strawberry, cranberry, cherry, and red currant, with wild/herbal notes. Dry, medium-bodied, subtle tannins, with mineral/salty notes and bright acidity.

Menu matches: A wine for food, with charcuterie, grilled pork/lamb/chicken, grilled sardines, spicy dishes, rice dishes (with grilled seafood) and earthier vegetarian options.
