CAN is a 50-50 blend of Listán negro and Vijariego negro grapes, grown on hillside vineyards at a height of 380 metres above sea level. Listán negro is from old vines and 50% are planted using the multiple braided cordon system, traditional in Orotava, and the rest using the Cordon Royat trellising system.

The grapes are hand harvested at ideal ripeness, then cold macerated for 4 days prior to fermentation (total maceration is 17 days). Alcoholic fermentation takes place in 10Hl stainless steel tanks and malolactic fermentation takes place in French-oak barrels - Nevers and Allier oak. The wine is aged for 8-10 months in French-oak barrels - 50% new and 50% second passage. Alc./vol. 13.7%

About the Grapes: Listán negro is the most widely planted red grape variety in the Canaries, particularly Tenerife, and is a cross between Listán Blanco and Negramoll.  Vijariego negro, has the longest growing cycle of the red grapes of the Canaries and is the last to be harvested. It is called Sumoll in Catalonia, where it is known for its ability to produce age-worthy wines.

Our Tasting Note: Deep, dark ruby/garnet colour. Complex aromas and flavours of dark, ripe fruits - plum, blackberry, Bing cherry, and blueberry - with toasty/smoky/mineral notes of vanilla spice, cinnamon, mocha, and fruit jam. Structured yet smooth, with fine tannins and a long evolving finish. Drink now after decanting, or put in the cellar for a couple of years. 

Pairings: Ideal with grilled/roasted/braised meats, mushroom dishes, and aged cheeses.
