Made from a careful selection of 100% Godello grapes, from 11 unique south-facing plots (“pezas”), with an average of 50 years of age (all from cuttings from the original Pedrouzos estate vineyard), grown on hillside slopes, in slate-rich soil, at an altitude of 300 metres above sea level. Slate soils contribute a distinctive mineral character to the wine.
Vinification is made by plot, to reflect the different expressions of each site, and at an even lower yield than Valdesil sobre lias. Following short skin contact, the wine is fermented (with natural yeasts) in different barrel types/sizes - 10 pezas in 500-litre, light-toast, French-oak barrels (3rd or 4th passage) and 1 in a 2000 litre oak vat (this is Pedrouzas). The wine is blended, then aged for 6 months in barrique (on the lees, with regular stirring) then racked into stainless steel tanks for a further 12 months prior to bottling. No malolactic fermentation, and fined with agents of mineral origin. Approximately 4000 bottles were produced.
Our tasting note:Bright yellow/gold colour; ripe aromas and flavours of warm citrus (grapefruit), apple and, pear, with mineral-tinged notes of nuts, vanilla spice, and herbs. Dry and medium-bodied, with balancing acidity and a long, rich, complex and evolving finish.
Pairing: Rich seafood (lobster), river fish, grilled white meats (chicken and pork), including those with creamy sauces, and earthy vegetarian dishes (mushrooms).
