Made from 100% Xarel-lo Vermell grapes - a rare, ancient red-skinned mutation of the white Xarel-lo grape (used in the Cava blend), and once considered extinct - grown organically in vineyards with primarily ancient Calcareous-clay soils, affected by cooling Mediterranean breezes. The grapes are hand-harvested at a reduced yield of 4500 kg/Ha.
The grapes are macerated for 8 hours to extract the delicate coral pink colour, then the juice is fermented in stainless steel tanks, kept at a cool temperature of 16º Celsius. The wine then remains on the lees for a further 90 days prior to bottling. Only 7100 bottles produced. Alc./vol. 11% R.S. 6 gr./L.

Our Tasting Note:Delicate coral-pink (onion skin)colour. Aromas and flavours of stone fruits - white peach - red currant, and pineapple with notes of nuts and herbs. Dry, with balanced acidity, good structure and a medium/long clean finish.
Pairing suggestions: A perfect aperitif wine, paired with a range of appetizers/tapas. Also with fresh-water fish, white meats (pork/chicken/turkey), and lighter-style vegetarian dishes.
