Made from 100% Glera grapes, harvested from low-yield vineyards in the Valdobbiadene hills ranging from 150-280 mt above sea level. The soils are morainic in origin, medium-textured bottom, primarily clay, with sandstone. Harvest was in September. Double-arched cane training system.
Following destemming and soft crushing, in an environment of controlled atmosphere to protect the juice from oxidation and bacteria, the first fermentation - to create the base wine - took place in temperature-controlled (14º - 16º celsius), stainless-steel tanks. Following the Martinotti method in an autoclave, the 2nd fermentation - to create the bubbles - lasted about 75 days. The process is carefully monitored and managed, automatically analyzing the evolution of the wine, and dosing nutrients and oxygen to get the best results from the yeast. Once bottled, the wine rests for 2-3 weeks before release.
Our tasting note:Brilliant, straw-yellow colour with greenish tinges. Fresh aromas and flavours of golden apple, pear, and ripe peach, with delicate floral notes. Dry (bottled midway in the extra dry range), with a fine and persistent perlage, marked acidity, and a rich, clean finish. 11.5% alc./vol.; RS 15 gr./L.
