This Pet Nat - sparkling wine made following the Méthode Ancestrale - is made from 100% Pinot Noir grapes from vines sourced from a single 2Ha plot that is 17 years old.
Whole cluster pressing with no skin contact, then fermentation in a 10,000L stainless steel temperature-controlled tank using ambient yeasts. The wine is bottled after first fermentation, without dosage, then disgorged in February by banging the bottles against a truck tire to dislodge the sediment and turning the bottles upside down. No filtering, and no malolactic fermentation. 950 cases produced. Alc./vol.: 11.5%.
Tasting note: Straw/yellow/gold colour. Aromas and flavours red fruits - raspberry, sour cherry, and strawberry - with floral and mineral notes. Sustained pettilance - almost frothy - dry, bright acidity, with a pleasant, clean finish.
Pairings:Pair with more delicate dishes -fresh fish, shellfish, even Sushi - or just enjoy a glass on its own.
