Case of 6 bottles.
This is an “orange” wine, made from Donzelinho and Samarrinho grapes - nearly extinct varieties - recovered from old vineyards in Alijó, at an altitude of ~650 meters.
Whole clusters are put into old, clay (1200L) amphora (no mechanical extraction) for ~12 months on the skins; no SO2 added. Spontaneous fermentation with ambient yeasts, then pressed off in January and bottled without fining or filtering. ~3,200 bottles produced. Alc./vol.: 12%.
Tasting note: Intense straw yellow/orange colour. Aromas and flavours of citrus (peel) and stone fruit (nectarine) with gentle floral/herbal notes. Medium-bodied, dry, refreshing acidity, some tannin tension, and a long finish.
Pairing Suggestions: A complex, gastronomic wine to pair with grilled fish, shellfish, white meats, fried foods, and strongly-flavoured vegetarian dishes.
FYI - UIVO - pronounced wee-voh - means “howl”, and has many connotations, including a reference frequent wildlife visits in the vineyards, which includes foxes.
