Made from 100% Syrah grapes, hand-harvested from a single 0.8Ha plot in Nieva, planted in 1999. The grafting wood comes from Crozes-Hermitage, in France’s Rhône Valley. Whole bunches, with stems, were harvested, for the most part, from the whole vintage.
Aeration and gentle pumpovers were used during the first half of the alcoholic fermentation (with native yeasts) to extract the floral and fruit notes. Hands and feet were used for second half of the fermentation. After a gentle pressing, the wine moved to Burgundian barrels - previously used for white wine - to round out the tannins and set the colour. No sulphites added. About 2 barrels produced each year. Bottled unfined and unfiltered, at ~13.5% alc./vol..
Our Tasting Note: Dark colour. Classic cool-climate Syrah, reminiscent of Northern Rhône wines, with notes of violets and smoked bacon. Complex aromas and flavours of blackcurrant, blackberry, and black cherry with notes of mint, dark chocolate, white pepper, and vanilla spice. Juicy with round tannins, and an elegant finish.
Pairing:Pair with grilled and roasted meats (lamb). Serve between 15º- 17ºC
