Geoff Merrill’s “reserve” range are a selection of his finest barrels from the vintage and given additional maturation in oak prior to bottling.
Made from 100% Cabernet Sauvignon - 60% coming from Coonawara and 40% from the McLaren Vale - harvested in March 2012. The year was considered an outstanding vintage due to lower yields brought about by more vigorous canopy growth during bud development, and cooler weather and some rain during the year that slowed down ripening to allow a good rate of fruit development.
Following traditional re-wine vinification, the wine aged for 34 months in new and used French- and American-oak hogsheads, and further aging in bottle before being released. 14.5% alc./vol.; R.S. 0.7 gr./L.. Aging potential to 2025-2030.
Tasting Note: Deep, rich, dark red colour, with slight ruby hues. Complex and evolving aromas and flavours of rich, ripe fruits – blueberry and blackberry – with savoury/herbaceous notes of vanilla spice, capsicum, white pepper, and dark chocolate. Well-structured, the tannins are ripe and firm, and the palate is powerful and full with good acidity. Overall very well-balanced with a long, refined finish.
Menu matches: Pair with grilled meats - steak and lamb - mushroom risotto, and hard/mature cheeses.
