2020 marked the first official vintage for this new DO category of wines in Italy. The grapes must be sourced from designated Prosecco vineyards and must be a minimum 85% Glera, with the remainder being Pinot Nero (Pinot Noir).
Made from 85% Glera and 15% Pinot Nero grapes, harvested from hillside vineyards in the Province of Treviso, ranging from 90-180 mt above sea level. The soils are morainic in origin, medium-textured bottom, mainly sandstone and clay. Harvest was in September.
Following destemming and soft crushing, in an environment of controlled atmosphere to protect the juice from oxidation and bacteria, the first fermentation - to create the base wine - took place in temperature-controlled (14º - 16º celsius), stainless-steel tanks. The Pinot Nero was vinified as a red wine, with some skin-contact maceration, at a low temperature. Following the Martinotti method in an autoclave, the 2nd fermentation - to create the bubbles - lasted about 90 days. The process is carefully monitored and managed, automatically analyzing the evolution of the wine, and dosing nutrients and oxygen to get the best results from the yeast. Once bottled, the wine rests for 2-3 weeks before release.
Our tasting note:Bright, soft pink colour. Fresh aromas and flavours of raspberry, wild strawberry, and cherry, with slight floral notes. Dry (bottled on the low range of extra dry), with a fine and persistent perlage, marked acidity and freshness, and a clean, fruity finish. 11.0% alc./vol.; RS 13.0 gr./L.
