No. 7 is a tribute to the original seven owners - a selection of grapes from seven different plots (Parcelario). The original No. 7 wine was created: first, to make a Txakoli that has more body and structure using select quality grapes; and, second, to last several years ageing in the bottle.
The Parcelario project was started to highlight the uniqueness of each plot, and bottling them separately. Not all plots are bottled every vintage, and in 2017 one of them was “Santos Txirenes” - plot #7. Only 1062 bottles were produced, and we received 30.
Santos Txirenes is located midway between the Sea of Biscayne and the interior valleys, and possesses a unique geological variability - alternating marl and limestone veins with pockets of sandstone and shale - and ecological harmony between the natural surroundings and the vineyards. The vineyard is at 55 metres above sea level.
Three grape varieties were planted between 2009 and 2015 - Hondarrabi zuri (the traditional grape of white Txakoli), Hondarrabi zuri zerratie (aka Petit Courbou), and Riesling - and this is a blend of all three. Traditional white wine production with fermentation and aging in stainless steel tanks, on its lees, to add volume and complexity.
Our Tasting note: Broad and unctuous on the palate, where the acidity drives the ripeness and balance. It starts out powerful and flavoursome - aromatics of rich citrus (grapefruit/lime), stone fruits, and delicate floral and herbal notes - then shows harmony, complexity, and elegance with notes reminiscent of time in the bottle.
