A blend of 60% Grenache (from 30-40 year old vines), 20% Carignan (from 80-100 year old vines), and 10% Syrah, from low-yield vineyards on mountain slopes. The grapes macerate for 15-20 days, then fermentation is in stainless-steel tanks. The blend is then made, and the wine is aged for 10 months in new French-oak barrels. Alc./vol. 14.5%
Tasting note: Deep cherry/purple colour with violet tinges. Complex aromas and flavours of black fruits - blackberry, cherry, and blueberry - with toasted sweet oak, mocha, vanilla spice, and black pepper notes. Intense, yet balanced, with good acidity, sweet, ripe tannins, and long finish.
Pairings: Grilled and braised meats - beef and lamb - earthy vegetarian dishes, and spicy Moroccan dishes.
