Case of 12 bottles.
The grapes (90% Sangiovese, 10% Cabernet Sauvignon) are harvested late September, from estate vineyards. The skins are thick and the pulp dense, with fully mature seeds.
Fermentation (each variety separately) takes place in temperature-controlled, stainless-steel tanks for 15 days, with skin contact to allow for good polyphenolic extraction. Malolactic fermentation also in stainless-steel tanks, and the wine ages for about 8 months in the same tanks to ensure a brighter, fruitier bouquet and soft structure. Held for six months in bottle before release. 13.5% alc/vol; R.S. < 1 gr/L.
Tasting Note:Bright, ruby red colour, with a purple rim. Deep, fruity nose with aromas and flavours of ripe, sweet, dark cherry and plum, and notes of mocha and earthy spices. Medium-bodied, round and well-structured with a long finish and pleasant depth.
Menu Matches: Pair with medium-dishes, particularly ones with tomato- and/or meat-based sauces, as well as grilled meats - hamburgers to steak. Versatile, it will match appetizers, pasta, pizza, and earthy vegetarian dishes.
