100% Malvasia; the grapes are hand-harvested in small (14kg) boxes from the oldest Pago of the family - named “Cuba Negra”- in south Labistada, and planted in 1910.
The grapes are destemmed and macerated for 24 hours. Alcoholic fermentation takes place in a 750 litre Austrian-oak foudre, and remains in the vat for 12 months - half of the time on the lees. Alc./vol.: 14.0%.
Tasting note: Bright straw colour. Intense, somewhat smoky aromas and flavours of stone fruits - peach and yellow plum - and warm citrus with floral/mineral notes of honey, laurel, aromatic herbs, nutmeg, and brioche. Medium- to full-bodied, dry, medium acidity, some mineral notes, with a long, elegant, finish.
Pairings:Shellfish, fresh- and salt-water fish, vegetarian dishes (artichoke), rice dishes,, white meats (grilled chicken and pork) and mature cheese. Good match with rich and strong flavours. Serve around 12-15 celsius.
