A cuvée of 70% Pinot Noir and 30% Chardonnay grapes, hand-picked in August from low yielding - 100 qli/Ha - estate vineyards. Each variety is fermented separately in stainless steel tanks, and the cuvée is made in the spring, following harvest, with the addition of sugar and yeast for the second fermentation. It remains in the bottle for a minimum of 24 months, then three more months post-disgorgment befor release. Remuage is with gyropallet.
Dosage 12 gr/litre. Alc./vol. 12.5%.
Only 8000 bottles produced.
Our Tasting Note:Pale pink colour, with fine and persistent bubbles. Elegant, fruity, aromas and flavours of strawberry, cherry, wild berries, and peach. Balanced acidity, fine and elegant, with a long persistent finish.
Food pairings:A great aperitif wine, and pairs well with fresh water fish, shell-fish, and light poultry courses.
