A cuvée of 80% Chardonnay and 20% Pinot Noir grapes, hand-picked starting in August from low yielding - 100 qli/Ha - estate vineyards. The base wine is fermented separately in stainless steel tanks, and the cuvée is made in the spring following harvest, with the addition of sugar and yeast for the second fermentation. It remains in the bottle for a minimum of 36 months (on the lees), then three more months post-disgorgment before release. Remuage is with gyropallet. Only 2,000 bottles produced.
Dosage less than 2 gr/litre. Alc./vol. 12.5%.
Our Tasting Note:Intense lemon yellow colour with golden tinges, with fine and persistent bubbles. Elegant and rich bouquet, with complex aromas and flavours of apple, pear, and honey. Balanced acidity, fine and elegant, with a long, full, persistent finish.
Food pairings:A great aperitif wine, and pairs well with grilled fish, sushi, shell-fish, Tempura, and white meat courses. A wine that can carry through an entire meal.
