For this wine, Masottina selects only the best Glera grapes from estate hillside vineyards, with a sunny exposure. Soil is primarily morianic in origin, and combined with a unique microclimate helps produce a sparkling wine that is both intense and characteristic. Guyot trellising is used, and plantings are between 3300 and 4000 vines per hectare.
The first alcoholic fermentation took place in temperature-controlled stainless steel tanks. The secondary fermentation, to create the bubbles, took about one month via the Charmat (Tank) method.
It is fully sparkling (spumante), at 5-bar pressure, bottled “extra-dry”, meaning that there is about 14 gr/l residual sugar – just barely noticeable, but an important element in the wine’s popularity. Alcohol is 11.5%/vol., and total acidity is 5.7g/l.
Our tasting note:Bright, pale straw yellow in colour with greenish highlights. Fully sparkling with a fine and persistent perlage. Offers up with intense, rich aromas of green apple, citrus (lemon and grapefruit), and acacia blossoms. Crisp and dry, with a full and lively, fresh finish.
Pairings: An excellent aperitif wine, it will also match a wide array to foods – particularly hors d’oeuvres -- and makes a great match for sushi.
