Made from 35% Macabeo, 34% Xarel-lo, and 31% Perellada grapes, hand-picked from 50+ year old vines. Production in the vineyards is managed organically.
Each variety is fermented separately, on the lees, for about a month in stainless steel tanks. The blend is made, then the second fermentation took place in the bottle with a minimum of 30 months aging on the lees to qualify as Gran Reserva. Bottles are disgorged individually (disgorgment date written on the back label), and only when required for market to ensure optimum condition of the finished wine. This bottling spent over 7 years on the lees.
Bottled Brut Nature (no dosage) with 0.5g/L residual sugar. 11.5 alc./vol
Our Tasting Note:Bright, straw/gold-yellow colour, with green hues. Very fine, persistent bubbles that evolve slowly in the glass to form a dense crown. Buttery/toasty aromas and flavours of baked apple, pear, and quince with nutty notes layered over a background of ripe fruits and vanilla spice. Balanced, rich, with a long and elegant/racy finish. Serve 6-7º celsius.
Pairing: Excellent on its own, and will pair well with grilled seafood, poultry with creamy sauce, small game, smoked foods, foie gras, rice dishes, Iberian ham, and semi-cured cheeses.
