Case of 6 bottles. 

This is a dry, white, gastronomic wine made from a long-forgotten, autochthonous grape variety - Bouysselet. Its parents are Savagnin and Plant de Cauzette.

In respect to the typicity of the terroir and grape variety, only the natural yeasts present on the grape skins at harvest are used. Following a slow pressing at low pressure, fermentation is in stainless steel tanks, equipped with thermal control. Ageing on the fine lees for approximately 8 months, half in sandstone (grés) amphora and half in demi-muids (small wooden casks) Alc./vol.: 13.5%.

Tasting note: Pale yellow colour with green tinges. Intense aromas and flavours of white peach and pink grapefruit, apple and pear, with slight mineral/quince notes. Medium- to full-bodied, dry, fresh acidity, well balanced, with a round/textured finish.

Pairings: Enjoy with oysters (including au gratin), crab and lobster, baked fish (sea bream and sea bass), earthy vegetarian dishes and semi-soft cheeses (find some Chabichou du Poitou).
