Made from 100% Godello grapes from old, low-yielding vines from two vineyard sites in the mountains near San Lorenzo and San Esteban de Valdueza. This location and the predominantly slate soils give the wine the characteristic Atlantic personality.
Grapes are hand-harvested with maximum vineyard selection. Vineyards are managed sustainably.
Pre-fermentation “cold-soak” for 24 hours, no pressed juice; the alcoholic fermentation occurs in temperature-controlled (under 12º), stainless-steel tanks. The wine is aged for eight months on the lees, in a 2nd-passage 2000 litre French-oak foudre. Fining with a gelatin-based agent; bottled unfiltered. 14.0% alc./vol.
The second vintage of this wine, and only 1500 bottles produced. Bottles are numbered and it ships in 4-bottle wooden cases.
Our tasting note: Pale straw colour, with golden tinges. Aromas and flavours of warm citrus, stone fruit, and pear, with white flower and mineral notes. Elegant, full, and generous with great freshness and purity on the finish. This wine will age gracefully for at least 5 more years.
Menu matches:A great pairing with seafood (sushi or sashimi), Tuna, ceviche, oysters, tempura, freshwater fish, poultry and Asian-style pork dishes. Don’t serve too cold.
