We've put together another rare opportunity to experience three top Cavas from one of the greatest producers in Sant Sadurni d'Anoia, Agustí Torelló Mata. Including, once again, a bottle of the legendary Cava Kripta. 

The winery is family owned and managed, and their full line of Cavas are now certified organic, and suitable for vegan diets (certified). Agustí Torelló stands firmly with tradition and flavour, using only Macabeo, Xarel-lo and Parellada in their Cavas, and production of their range is limited due to, among other things, the age of their vines. Bottles are typically disgorged individually (date is shown on the back label), and only when required for the market to ensure optimum condition of the finished wine. 

This case is made up of one bottle of each of the following Cavas. All are also available by-the-case, and can be found elsewhere on this site.

Wine# 1 Cava Brut Reserva 2018

Made from a blend of 36% Macabeo, 28% Xarel-lo, and 37% Parellada grapes, hand-picked from ~35 year old certified organic vineyards in the area of Sant Sadurní d'Anoia. 

Each variety is vinified separately, using indigenous yeasts. Second fermentation took place in the bottle, in underground cellars, with a minimum of 36 months aging on the lees. Bottles are disgorged individually, and only when required for market (2 -3 weeks supply) to ensure optimum condition of the finished wine.

Bottled (Brut) with approximately 6.0g/L residual sugar. Alcohol 11.5%/vol. Certified organic and vegan.

Pale straw/gold colour with green tinges, with fine, persistent bubbles. Aromas and flavours of fresh white fruits (for example apple and pear), warm citrus, with slight leesy notes of caramel and fresh herbs. Balanced and rich, with a long and elegant finish.

Excellent on its own, but will accompany appetizers, salads, Sushi, first courses of white meats, seafood, or fish, and fruit desserts. 

Wine #2 Cava Brut Nature Gran Reserva Barrica 2017

Made from 100% Macabeo grapes, hand-picked from 30+ year old vines. The single plot - Pla dels Fidels - is in the littoral zone of the Garaf, at about 150m above sea level. 

Forty percent of the wine was fermented and aged for 8 months in new French-oak (Tronçais) barrels, and the rest was fermented on the lees for a month in stainless steel tanks. The second fermentation took place in the bottle with a minimum of 30 months aging on the lees (to qualify as Gran Reserva). Bottles are disgorged individually (disgorgment date written on the back label), and only when required for market to ensure optimum condition of the finished wine. This bottling spent more than 5 years on the lees.

Bottled Brut Nature (no dosage) with 0.5g/L residual sugar. 12.0 alc./vol

Straw-yellow colour, with very fine, persistent bubbles that evolve slowly in the glass to form a dense crown. Toasty aromas and flavours of fresh green apple, pear, and ripe citrus with spicy, nut and vanilla notes. Balanced, rich and creamy, with a long and elegant finish. 

Excellent on its own, and will pair well with grilled seafood, poultry, smoked foods (oysters), foie gras, rice dishes, Iberian ham, and semi-mature cheeses.

Wine #3 Cava Kripta Brut Nature Gran Reserva 2014

Kripta, was created in 1979 by Agustí Torelló Mata. This unique Cava has been described by Michel Bettane, an influential wine critic in France, as a sparkling wine comparable to the very best champagnes, and he included Kripta in his book of “The Best 100 Wines of the World” along with 4 other sparkling wines (all Champagne).

Kripta is a coupage of three traditional Cava white grape varieties, all organically grown and hand-harvested from three unique plots in the Penedès. The Macabeo (45%) is from the Vicari vineyard in Sant Pau d'Ordal (planted in 1962); the Xarel-lo (20%) is from the Mercader vineyard in Sant Sadurni d'Anoia (planted in 1974); and, the Parellada (35%) is from the Lola vineyard in Sant Joan de Mediona (planted in 1969.

Following the traditional method of making sparkling wine (like champagne) the second fermentation takes place in the amphora-shaped bottle, with a natural cork,  over a period of at least eight years, approximately the same amount of time as some of champagne’s great marques. Bottles are individually numbered - with the date of disgorgement shown on a card inside the box. Approximately 26,000 bottles produced in this vintage.

Certified organic. 11.5% alc./vol.; 0.6 g/l residual sugar (bottled brut nature).

Pale straw-yellow colour, with golden hues and a very fine and persistent mousse. A clean and crisp bouquet reminiscent of hazelnuts, warm citrus, and ripe fruits – pear and yellow apple - with notes of lightly buttered toast, and truffle. Very elegant and delicate with a lingering, clean finish. 

Savour this wine on its own, with a light snack of Iberian ham and cheese, or pair with grilled seafood, smoked foods (oysters), or foie gras.
