White Txakoli (pronounced chak-oh-lee) is made from an indigenous Basque grape called Hondarribi-Zuri (pronounced on-dar-ee-bee zoo-ree). The grapes for this wine are grown on south-facing hillside soils at an average height of 50-200 metres above sea level, with a distinctly Atlantic climate. Sourced from 18 different plots, grown sustainably, and represents about 80% of total production of the winery.
Txakoli has a complex varietal personality; full of flavour with notes of citrus fruit, delicate white flowers, and a distinctive minerality. Refreshing acidity is balanced with fruit flavours, and finishes dry on the palate.
Fermentation took place in temperature-controlled stainless steel tanks to retain the fresh aromatics of the grape, and the wine is aged in stainless steel (off the lees) until bottling in the spring. The wine did not undergo malolactic fermentation.
Style: Itsasmendi Txakolina are typical of the Bizkaiko style, which is different than those of DO Getariako (of San Sebastián) which usually have a slight carbonic fizz and are served at height using a Porrón (although not necessary for Itsasmendi).
Our Tasting Note: Bright, lemon yellow in colour. Fresh citrus aromas of lemon, lime, and Mandarin orange with delicate floral and mineral notes. Crisp and fresh on the palate, bright acidity, and a dry, lingering, clean finish.
Pairing:A great aperitif wine, and one to match with seafood, shellfish, fresh cheese, or local pintxos (tapas).
