A cuvée of 80% Chardonnay grapes and 20% Pinot Noir grapes, hand-picked in August from low yielding - 100 qli/Ha - estate vineyards. Each variety is fermented separately in stainless steel tanks, and the cuvée is made in the spring following harvest, with the addition of sugar and yeast for the second fermentation. It remains in the bottle for a minimum of 18 months (on the lees), then minimum three more months post-disgorgment before release. Remuage is with gyropallet. Approximately 25,000 bottles produced.
Dosage 7 gr/litre. Alc./vol. 12.5%.
Our Tasting Note:Straw-yellow/gold colour, with fine and persistent bubbles. Elegant and rich, with slightly yeasty aromas and flavours of pear, warm apple, and vanilla. Balanced acidity, fine and elegant, with a long persistent finish.
Food pairings:A great aperitif wine, and pairs well with grilled fish, shell-fish, poultry and white meat courses.
