Franciacorta DOCG Blanc de Noir 2012

6 bottle case. 

A cuvée of 100% Pinot Noir grapes, hand-picked starting in August from low yielding - 100 quli/Ha - estate vineyards. The base wine is fermented separately in stainless steel tanks, and the cuvée is made in the spring, following harvest, with the addition of sugar and yeast for the second fermentation. It remains in the bottle for a minimum of 36 months (on the lees), then three more months post-disgorgment before release. Remuage is with gyropallet. Only 4,000 bottles produced.

Dosage ~4 gr/litre. Alc./vol. 12.5%. 

Our Tasting Note:Pale lemon yellow colour with golden tinges, with fine and persistent bubbles. Elegant and rich, with complex aromas and flavours of warm yellow apple, honey, and delicate flowers. Balanced acidity, fine and elegant, with a long, full, persistent finish.

Food pairings:A great aperitif wine, and pairs well with grilled fish, sushi, shell-fish, and white meat courses. A wine that can carry through an entire meal.
