The grapes (100% Sangiovese) are hand-harvested late-October from estate vineyards, when they have reached sugar levels of ~22-23 percent. At this stage the skin is thick and the pulp dense, with fully mature seeds.
Fermentation takes place in temperature-controlled, stainless-steel tanks, with skin contact of about 40 days to allow for good polyphenolic extraction. Malolactic fermentation takes place naturally in large oak casks.
The wine ages for approximately 30 months in 20 hectolitre, fine-grained, French-oak barrels, to soften the more aggressive attributes of the Sangiovese grapes, and to develop a more balanced wine with a complex bouquet. The wine is then bottled and aged for a further 12 months before release. 2015 is a spectacular Tuscan vintage. 14.5% alc./vol.; <0.8 gr/L R.S.
Our Tasting Note:Intense deep ruby-red colour. Deep and rich, with aromas and flavours of dark cherries, wild raspberry, and blueberries, with notes of mocha, menthol, and vanilla spice. Round, smooth, and well-structured with firm tannins, lovely acidity, balanced alcohol, and a long, elegant finish.
Menu Matches: It will complement most medium- to full-bodied dishes, particularly grilled red meat (beef tenderloin or lamb), game, salumi, or classic pasta dishes with meat-based sauces.
