Prosecco Brut DOC Treviso
Case of 6 bottles.
Made from 100% Glera grapes, harvested from low-yield vineyards in the Veneto - Province of Treviso - ranging from 30-180 mt above sea level. The soils are morainic in origin, medium-textured bottom, mainly sandstone and clay. Harvest was in September. Double-arched cane training system.
Following destemming and soft crushing, in an environment of controlled atmosphere to protect the juice from oxidation and bacteria, the first fermentation - to create the base wine - took place in temperature-controlled (14º - 16º celsius), stainless-steel tanks. Following the Martinotti method in an autoclave, the 2nd fermentation - to create the bubbles - lasted about 45 days. The process is carefully monitored and managed, automatically analyzing the evolution of the wine, and dosing nutrients and oxygen to get the best results from the yeast. Once bottled, the wine rests for 2-3 weeks before release.
