Winemaking Process: Using modern oxidation-free pneumatic presses, with a gentle pressing they extract the best part of the grape must. Each vineyard is vinified separately in small tanks to personalize each coupage. The selection of their own autochthonous yeasts, selected over a period of 40 years, creates the lees that add complexity and character to each bottle of Cava. This is a blend of the three classic Cava grape varieties: Macabeo (48%), Xarel-lo (25%), and Parellada (27%)

Bottling takes place in the coldest months of January and February, where lower temperatures create the minimum amount of froth. The second fermentation in the bottle takes place slowly and under optimum conditions of darkness, humidity and low temperatures. For Brut Reserva, there is a minimum of two years aging on the lees to reach the fullness of its aromas and render grace and finesse to its sparkle - this wine is closer to four years aging.

With disgorgement, the “mother yeast” is removed from each bottle, the ageing process comes to an end and the Cava is ready for release. This is one of the driest Brut cavas on the market with approximately 5.5g/L residual sugar. Bottles are disgorged individually, and only when required for market to ensure optimum condition of the wine.

Alcohol Content: 11.5% alc./vol.

Tasting Note

Tasting Note: Pale straw-yellow colour, with very fine bubbles that evolve slowly in the glass. Aromas and flavours of ripe apple and pear with subtle notes of caramel, citrus, and herbs. Balanced, with a long and elegant finish.

Serving Method: The ideal serving temperature is 7ºC. Chill the bottle slowly, ideally in a bucket of ice and water. Ensure the glass is smooth, fluted and no more than 2/3 full.

Ageability: It is recommended the cava be consumed within 18 months of disgorgement, provided the wine is stored under optimum conditions.

About the Grape

Macabeo: Northern Spain's most planted white-wine grape -- it is one of the three traditional grapes in the Cava blend -- it can also be found in southern France. It contributes distinctly floral aromas to the blend, and is relatively low in acidity unless picked early (like Chardonnay).

Parellada: One of the three grapes (with Macabeo and Xarel-lo) that make up the blend of Spain's famous sparkling wine, Cava. The least planted of the three, it contributes fresh acidity and delicate fruit notes. It is also made in to dry, aromatic-style white wine.

Xarel-lo: It's not the last grape name alphabetically speaking (Zweigelt is), it's not even the only wine grape that starts with "X" (actually there are 3), but it is an important part of the famous Spanish sparkling wine called Cava. And in case you are wondering it's pronounced chah-REHL-loh.

Growers like it for its vigour, and its contribution to the Cava blend is acidity and certain distinguishing aromas -- stone fruit (apricots), wildflower, almond, and cut grass, in particular.

In the heart of the Penedes, near the town of Sant Sadurní d’Anoia, Agustí Torelló Mata produces a range of high quality Cava (Spanish sparkling wine), featured on the wine lists of many of Spain’s celebrated restaurants. One of their most notable achievements Cava Kripta, unique for its extended ageing and handmade amphora-shaped bottle.

Agustí Torelló Mata is family owned and run; each of the four Torelló siblings has an active role in the business.

While there is movement to use the more fashionable higher-producing grapes like the Chardonnay and Pinot Noir in the Cava blend, Agustí Torelló stands firmly with tradition and flavour, by using only Macabeo, Xarello, Parellada, and Trepat (for the Cava rosé). The production is very limited due, among other things, to the age of their vines.

Every bottle of their Cava includes the date of disgorgement, the guarantee that every bottle of Cava is in optimum condition on the market and when consumed by customers.
